With our #newmealoftheweek series, we have challenged ourselves to try and create a new dish in the kitchen each week to expand our foodie horizons with plenty of delicious recipes.

This meal is just as quick as store-bought pasta sauce but much better! I found the original recipe ages ago so can’t take credit, however am unable to find the initial post for linking :(.


  • 500g penne pasta
  • 120g baby spinach
  • 100g sundried tomatoes
  • 190g grilled peppers
  • 150g cream cheese
  • parmesan (optional)
  • rocket (optional)


Step 1) place pasta into a pan and cook according to packet instructions.

Step 2) meanwhile place baby spinach into a colander and swirl over with freshly heated hot water until shrivelled. Then add to blender, along with sundried tomatoes, grilled peppers and cream cheese.

Step 3) Yes, the green is vibrant but TRUST THE PROCESS, drain the pasta and stir until sauce is well combined.

Step 4) Add a generous amount to a plate, top with parmesan, rocket and extra sundried tomatoes and you’re good to nom!
