With our #newmealoftheweek series, we have challenged ourselves to try and create a new dish in the kitchen each week to expand our foodie horizons with plenty of delicious recipes.


This week I went for a simple meal that my sister showed me many years ago. Personally I love it and it’s often my go-to when I don’t have a lot of energy at the end of a busy day.


Ingredients:

  • 3 peppers (any colour)
  • 1 tin of salsa
  • 150g cous cous
  • 1 vegtable stock cube
  • a blob of butter
  • grated cheese

Directions:

Step 1) Slice the peppers in half, deseed and wash. Fill the bottom of each pepper with a thin layer of salsa.

Step 2) Mix the butter, stock cube and cous cous together and then make up according to your packet instructions.

Step 3) spoon the cous cous into each pepper, top with cheese and then place on a baking tray in the centre of a preheated fan oven at 160 degrees for 25 minutes.

Step 4) Once cooked transfer to plate and enjoy as it is or pair it with a sauce. Personally I like it with chilli mayo but my partner prefers garlic and herb so it’s completely up to you!
