With our #newmealoftheweek series, we have challenged ourselves to try and create a new dish in the kitchen each week to expand our foodie horizons with plenty of delicious recipes.

This week I decided to tackle something out of my comfort zone, a new meat dish. Since I’m a vegetarian I do tend to stray away from experimenting with meat dishes and instead just cook what I know when catering to meat-eaters, simply because I’m terrified of the idea that I could give someone food poisoning or worse! But in the name of What in the World, I thought I should expand my horizons and play with something new, so this week I created a Chorizo and Mozzarella Baked Gnocchi. The inspiration for this dish came from Sarah’s Healthy Kitchen, although I did kind of go a little off-menu with seasoning and vegetable choices.


  • Olive oil
  • Large onion
  • Garlic
  • 60g of chorizo
  • 2 tins of chopped tomatoes
  • 2 tsp caster sugar
  • 500g of gnocchi
  • 125g mozzarella
  • Vegetables of your choice (I went with peas, carrots, cauliflower)


Step 1) Place your gnocchi in a pan and boil for 3-5 minutes until soft. Note that it says 620g on my scales here because I added some extra gnocchi for a vegetarian dish that I was making alongside this. While it’s boiling, dice your onions and then fry them in a pan with oil and garlic until soft and starting to brown (I use a heavy tsp of lazy garlic).

Step 2) Slice your chorizo down the middle and dice up. This is where I found out that the string is just at the top and bottom of the chorizo and not all the way through it – yes, this was a revelation to a lifelong vegetarian like me.

Step 3) Place your vegetables of choice in a pan and boil until soft. I had some carrots that needed using and also thought this dish could do with some peas and some cauliflower for soaking up the flavour. Maybe it’s the veggie in me but I just don’t feel like any dish is complete without at least 3-4 different types of vegetables.

Step 4) Turn your attention back to your onions and garlic and add in the two tins of chopped tomatoes. Give everything a big stir before adding in the caster sugar and some seasoning of your choice. I went for basil and oregano because chorizo has a strong flavour of its own and I just wanted the herbs to compliment it.

Step 5) Bring the mix to a simmer and add in your gnocchi before giving everything a good stir. Let it cook together for a couple of minutes before adding in half your mozzarella.

Step 6) Stir everything together until the mozzarella has blended into the sauce, then add in your vegetables and stir once more. Take everything off the hob and pour into a baking dish. Place the remaining mozzarella in chunks on the top and sprinkle some extra basil all over.

Step 7) Bake the dish in the oven for approx. 5-10 minutes until the mozzarella melts and looks all yummy. For some reason this was taking a lot longer for us and we got a little impatient and just pulled it out after 10 minutes because it was dinner time and we were hungry! But there we have it, a flavourful, easy meat dish that went down a treat!
