With our #newmealoftheweek series, we have challenged ourselves to try and create a new dish in the kitchen each week to expand our foodie horizons with plenty of delicious recipes.
This week I choose to make a recipe from bbc good food. The only difference really is I doubled it so had plenty for freezing down and decided not to dry-fry at the start.
- 4 tsp cumin seeds
- 1 tsp chilli flakes
- 1.5kg carrots
- 280ml split red lentils
- 2 l vegetable stock
- 250ml milk
- Optional: Plain yogurt and naan for serving.
Step 1) Wash and roughly cut the carrots (no need to be precious, they’re going to be blended). Add the diced carrots, red lentils, cumin seeds, chilli flakes, vegetable stock and milk to pan.
Step 2) Bring pan to the boil, then simmer until carrots are tender and lentils have swollen (about 15-20 minutes).
Step 3) Blend the soup until smooth and serve with plain yogurt and naan.
