With our #newmealoftheweek series, we have challenged ourselves to try and create a new dish in the kitchen each week to expand our foodie horizons with plenty of delicious recipes.

This recipe was shown to me by my older sister quite a few years back and still remains on my meal rotation list to this day. Why? Because it’s so easy and quick to throw together!


  • 1 tbsp oil
  • 2 tins new potatoes
  • 2 tins green beans (or frozen)
  • 2 lots of cherry tomatoes
  • 3 tbsp green pesto
  • grated cheese/flatbread/coleslaw (whatever you fancy for serving with)


Step 1) Slice the new potatoes in half and add them to a pan, along with green beans and the water inside the tin. Turn the hob on low-medium and let it warm through (about 10-15 minutes)

Step 2) In the meantime slice the tomatoes in half and add them to a mixing bowl, along with the pesto and oil. Stir until well mixed.

Step 3) Once the potatoes and green beans are suitably warm, drain and combine with the pesto mixture.

Step 4) Sprinkle with cheese, serve with some choice sides and devour 😀
