With our #newmealoftheweek series, we have challenged ourselves to try and create a new dish in the kitchen each week to expand our foodie horizons with plenty of delicious recipes.


With colder days sweeping in, it’s time to make full use of that slow-cooker that’s been sitting comfortably in the back of the cupboard for half a year. This vegetarian alternative to the bbc’s recipe can be served with rice and tortilla chips or even enjoyed on its own.


Ingredients:

  • 1 and a half tbsp oil
  • 600g Quorn mince
  • 1 large onion
  • 1-2 celery sticks
  • 2 red peppers
  • 3 garlic cloves
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 2 tsp dried oregano
  • 95g jar chipotle chilli paste
  • 3 tbsp tomatoed puree
  • 400g tin chopped tomatoes
  • 400g vegetable stock
  • 2x 400g tin black beans,
  • 4 small cubes of dark chocolate
  • optional: tortilla chips, cooked rice and soured cream

Directions:

Step 1) Add Quorn mince straight into the slow cooker and finely dice the celery, onion and peppers. Add oil to pan and and fry the onion and celery until softened (roughly about 10 mins).

Step 2) Add the garlic, cumin and paprika and stir together until combined (about 1 minute). Then add to slow cooker.

Step 3) Add and then stir in the oregano, chipotle paste, tomato puree, chopped tomatoes, stock and peppers.

Step 4) Cover and cook on low for 6-8 hours. Within the last half an hour, drain and stir in black beans, along with the chocolate.

Step 5) Make up rice or whatever you decided to throw with it, spoon out a healthy amount and you’re done!
